It's time for another one of Cafe Margaux's amazing wine pairing dinners. For this evenings culinary adventure the featured winery was Washington State's own Chateau Ste Michelle. The menu consisted of seven courses paired with a variety of fine wines along with a warm up glass of 2007 Nellie's Garden Dry Rose to get the dinner started.
Now check out what was on the menu (Do not be intimidated by the descriptions, the food is elegant yet enjoyable for all).
1st Course - Cream of Butternut Squash and Winesap Apple, Pancetta & Pecan Creme Fraiche. Paired with 2008 Columbia Valley Pinot Gris.
2nd Course - Bitter Field Greens with Toasted Pignolias, Proscuitto, Piave, and Marinated Tomatoes topped with a Creamy Garlic Vinaigrette. Paired with 2008 Horse Heaven Vineyard Sauvignon Blanc.
3rd Course - Leek Crusted Norwegian Salmon with Carnaroli and Couscous in a Scallion Caper Beurre Blanc. Paired with 2006 Cold Creek Chardonnay.
4th Course - Feta Stuffed Pheasant Breast Wrapped in Boars Bacon with Himalayan Red Rice and a Rosemary Bourbon Sauce. Paired with 2005 Ethos Syrah.
5th Course - Balsamic Marinated Lamb Chops with Whipped Purple Potatoes and a Black Chanterelle Bordelaise Sauce. Paired with 2006 Canoe Ridge Estate Cabernet Sauvignon.
6th Course - Proscuitto di Parma & Aged Parmigiano-Reggiano. Paired with 2005 Artist Series Meritage.
7th Course - Spiced Pumpkin Gateau with Layers of Walnut & Lemony Mascarpone. Paired with 2006 Eroica Ice Wine.
